About the Recipe
Ingredients
4 sweet plantains ripe enough
3 tablespoons unsalted butter
A classic French sauce (see recipe)
1/4 cup olive oil
2 onions, diced
1 green bell pepper, diced
2 garlic cloves, smashed
1 sprig of thyme and parsley
1½ teaspoons ground oregano
1½ teaspoons ground paprika
kosher salt, to taste
freshly ground black pepper, to taste
2 cups mozzarella cheese
1 cup Parmesan cheese
1 Cup Emmental cheese
Preparation
1. Preheat the oven to 410°F (thermostat 7).
2. Prepare a béchamel sauce (see recipe).
3. Rinse the plantains, then place them with their skin on in a large pot of cold water. Bring to a boil, and cook for 15 minutes from the time the water starts boiling.
4. Peel and slice each plantain into rounds.
5. Pour in the béchamel sauce and mix well.
6. Pour the mixture into your "Ayiti Cherie" mold (mold should be specific to the dish you are preparing, if it's a branded item or a type of dish; otherwise, use 'baking dish').
7. Sprinkle with grated cheese.
For a crispy and delicious gratin, you can add breadcrumbs.
8. Bake for about 45 minutes. Keep an eye on the cooking after 30 minutes to ensure the plantain gratin does not burn. If necessary, reduce the oven temperature.
TIPS
This delicious plantain gratin will go wonderfully with a leg of lamb, pork chops, or a beautiful roasted chicken.
