2 egg yolks
30g sugar
100ml heavy cream
1 ripe mango (e.g., Baptiste mango)
Brown sugar for caramelization

1. Preheat the oven to 160°C (320°F).
2. Cut the mango into three pieces.
3. In a pan, melt the butter and caramelize the mango pieces.
4. Once the mango is caramelized, set it aside, then scoop out the flesh and blend it with the heavy cream and spices (cinnamon, lime zest, nutmeg, vanilla extract). Pour the mixture into a bowl.
5. In a mixing bowl, whisk the egg yolks with sugar until the mixture becomes pale and creamy.
6. Combine the eggs with the previously blended mango-based mixture.
7. Pour the mixture into oven-safe ramekins.
8. Place the ramekins in a water bath and bake for about 30 minutes, or until the custard is set.
9. Allow the crème brûlée to cool, then refrigerate for at least 2 hours.
10. Just before serving, sprinkle generously with brown sugar and caramelize using a kitchen torch or the oven's broiler.
